Eat Green this St. Patrick's Day

St. Patrick's Day is Wednesday, March 17th.  To celebrate all day, we have put together a green menu for breakfast, lunch, dinner, and dessert!

 Breakfast: Lucky Charms Pancakes

  • Any pancake mix
  • Green food coloring
  • Cool whip
  • Lucky Charms cereal marshmallows
Directions: Make your pancake mix as directed, and add about 5 drops of green food coloring to the batter. Top off your stack with cool whip and lucky charms! 

 Lunch: California Turkey Club Wrap

  • 1 spinach tortilla wrap 
  • mayonnaise 
  • mustard 
  • 2 ounces turkey lunch meat 
  • 2 slices of cooked bacon 
  • 2 ounces avocado, sliced 
  • 2 slices of tomato 
  • 1 cup of shredded iceberg lettuce
Directions: Assemble the turkey wrap by layering in the order the ingredients are listed. Wrap, cut, and serve.  Will keep wrapped in saran wrap in an airtight container for 3 days if you are making it in advance. (Recipe courtesy of Tastes Lovely)

 Dinner: Instant Pot (or Crock Pot) Salsa Verde Chicken

This Instant Pot Salsa Verde Chicken can be made in the Instant Pot or the slow cooker - it's a one pot Mexican-inspired green rice bowl made with tomatillo salsa then topped with avocado, cilantro and jalapenos!

  • 1 tbsp olive oil
  • 2 medium-sized chicken breasts, diced into 1 inch pieces
  • 1 medium-sized yellow onion, diced
  • 3 cloves garlic minced
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1 1/2 cups chicken broth
  • 2 cups salsa verde
  • 1 can black beans
  • 1 cup frozen corn (do not defrost!)
  • 1 cup jasmine rice
  • 2 green peppers, sliced
  • 1 avocado, sliced
  • 1 jalapeno pepper, sliced
  • 1/2 cup cilantro, chopped
  1. Add olive oil, chicken, onion, garlic, spices, broth, salsa, beans, corn and rice to Instant Pot in that order. Cook on high pressure for 5 minutes, then do a quick release of the pressure. Instant Pot will take about 10-15 minutes to come to pressure, then the 5 minutes to cook.
  2. When safe to do so, remove lid and stir in green peppers. Replace lid and let sit for 5 minutes.
  3. Divide among four bowls and top with avocado, jalapeno and cilantro. Serve and enjoy!
Crockpot instructions: Add olive oil, chicken, spices, broth, salsa, beans, corn and rice to slow cooker. Cook on high for 6 hours or low for 8 hours. Stir in green peppers and let sit 5-10 minutes. Divide among four bowls and top with avocado, jalapeno and cilantro. Serve and enjoy!

 Dessert: Leprechaun Dessert Shooters

Easy enough for the littlest Leprechaun to help make!

  • 1 package instant vanilla pudding - prepared to package directions
  • 3-6 drops green food coloring
  • 4-6 Oreo cookies per glass
  • Whipped cream
  • Rainbow sprinkles
  • Mini-chocolate chips
  1. Prepare your pudding & stir in your food coloring until you reach the desired shade of green you would like.
  2. Layer in your glasses by starting with 1-2 broken Oreo cookies in the bottom
  3. Followed by a couple of tablespoons of prepared pudding
  4. Continue until you fill the glass
  5. Top with whipped cream & sprinkles/mini-chocolate chips if desired.
