No Bake Energy Bites

Energy Bites, are such a simple satisfying snack to have on hand for kids and adults and perfect for summer. My nine-year-old son can make them all on his own. ** Pro-tip double the recipe! **

What’s best about this recipe….No baking! Just mix the ingredients all together, shape them into balls and refrigerate! Easy peasy!

No-Bake Energy Bites:

  • 1 1/2c Peanut butter
  • 1/2 c honey
  • 1 1/2 -2 C old fashioned/quick oats
  • 1/2 c protein powder..vanilla or chocolate
  • 1/4 tsp salt
  • 1/2 c chocolate chips *
  • 1tsp vanilla
  • 1Tbl chia seeds/flax seeds *

Mix all the ingredients in a large bowl with a spatula. If the mixture is too wet add more oats. Scoop out into round balls (I use an ice cream scoop).

Lay on a baking sheet lined with parchment paper and refrigerate for 1 hour (or stick in the freezer for 20 min if short on time)!

Keep refrigerated until gone.  Can make a larger batch and freeze.

*Indicates optional ingredients or feel free to swap chocolate chips with raisins, coconut, m&m’s, nuts, anything you desire.

We make these with vanilla and chocolate protein powder and they are delicious either way.
